Fresh Tomatoes and Some Shrimp

Some fresh tomatoes, a little garlic, white kidney beans, cooked noodles, a little fresh parsley, and some shrimp and you have a meal.
A 1/4 cup of chopped parsley
About two cups of noodles.

Two cloves of garlic minced.
One can of white kidney beans, drained.
I used about 10 small tomatoes cut up into quarters.
One pound of shrimp cleaned.
A bit of grated cheese if you like.
Heat up 3 tablespoons of olive oil with the minced garlic for about three minutes, and then add the parsley, beans and tomatoes and cook for 5 minutes and then add the cooked noodles and the shrimp, and cook until the shrimp are done - two to three minutes. Enjoy.
So easy and fresh.

  1. That looks yummy. Do you think it would work with chicken? Picky eaters...

    1. Haha.. I think if you want to make it with chicken then you would fully cook the chicken before adding it to the dish, but chicken sounds wonderful.
